The sitter in this portrait is a pastry chef from Venezuela who works at The Modern Pantry restaurant in Clerkenwell. When asked to make a portrait for The World in London project it seemed natural to return to a series I have been engaged with for a number of years concerning people working in the food industry.
London boasts a very long and distinguished tradition of employing in its bars and restaurants people from all over the world, which is why the city is fêted as one of the world's greatest and most diverse gastronomic centres.
For just as almost every country on earth is represented at the Olympics, so London's kitchens and dining halls may lay claim to represent as comparable and diverse a number of nationalities, manning its stoves and waiting its tables.
